This splashy hors d’oeuvre elevates any sparkling wine gathering. The caviar dip is also spectacular with roasted sweet potatoes, seared scallops, or a platter of lox.
Ingredients
- 1 5-oz container crème fraîche
- 1 Tbsp freshly squeezed lime juice, or more to taste
- 1 Tbsp very finely chopped cilantro leaves and tender stems
- 2 oz ginger-infused whitefish caviar*
- 10 oz potato chips
Directions
In a small mixing bowl, whisk together the lime juice and cilantro, then gently stir in the caviar, reserving 1 tsp or so for garnish. Taste and adjust seasoning with more lime juice or herbs. Transfer dip to a serving bowl, top with the reserved caviar, and enjoy with fresh potato chips and your sparkling wine of choice.
*Wasabi-infused roe also works well. For the ultimate indulgence, use classic sturgeon caviar replacing lime juice with lemon, and cilantro with chives.
